What are some of your favorite ways to prepare your ducks?

Slice breasts into 1/4 inch by 1 1/2 inch strips. Wrap the strips around a tater tot and a slice of jalapeno, then wrap that with a slice of bacon. Run a toothpick through it to keep it together. Bake until bacon is done. Remove from oven and place in skillet with enough General Tso, (or your favorite BBQ) sauce to roll them around in and coat them thoroughly and then turn up the heat until all the sauce is reduced and has become a sticky coating on the bacon tot jalapeno bites. Grab a beer, a paper towel, turn on the game, and dig in.

Soak in salt water, in fridge, change water 2 times a day for 1 or 2 days. Cut into 3/4" cubes dunk in franks red hot sauce or milk and batter with house Autry seafood breader fry til golden...

I've done a duck lasagna too, wasn't too bad.

Also cube and jalapeņo wrap in bacon is okay... My fav is fried.

Hard to mess up a woodduck unless you over cook it. I learned to avoid the ringnecks while puddler hunting lol

Slice duck breast into strips about 1/4 inch thick. Marinate in soy sauce over night. Wash the soy sauce off. Double batter by first rolling the duck in flour that has been seasoned to taste with salt and pepper. Dip in milk and egg wash and roll in the flour again. Deep fry, but do not over cook. Serve with honey mustard. You can also pre-fry these and then reheat in the grease just like a chicken nugget.

Duck fried rice turned out well. We used a mix of rice (white, brown, red, and wild) green onion, carrots, fried egg, soy sauce, bacon, and golden eye breast meat.

I've had it just like you would make liver and onions and I liked it a lot. Prolly cause I like liver and onions (but only on an occasional basis).
